Here's the basic recipe:
3 Cups whole wheat flour
1 1/2 tsp yeast (regular)
1 tsp salt
1-2 Tb honey (or some kind of sweetner)*
1 3/4 Cup warm water.
Stir the dry ingredients together. Add honey. Add water. Stir until mixed and you have a moist, sticky dough. Dump into 9 x 5 loaf pan either greased or lined with parchment paper. Let rise and cover with cloth 40 min. (we live almost at sea level so adapt as you need to..) Bake at 400 F for 30 min. Remove from pan and cool.
Another option would be to use 2 Cups whole wheat flour and 1 cup Oats. I find this variation to be a bit drier so I add a little extra water to the dough.
*I've tried to omit the honey several times. When I do, I use 110 F water and let the bread rise a little longer. The end result is almost the same.
We LOVE this recipe. It's so chewy and moist. And SO EASY!
